Now It’s Time for Brunch
What says “Mother’s Day” more than a delicious, fresh brunch? I guess breakfast in bed after sleeping in might be a close second. Either way you choose to celebrate, making the mom in your life a delicious mid-morning meal will surely show your love.
If you have kids around who want to participate in the cooking, egg-in-a-hole by Food Network might just be the perfect recipe for little hands.
What you will need:
Your mom’s favorite bread
Eggs (we suggest Farmer Boy Eggs for best results, of course)
Butter
Salt and pepper to taste
How to make it:
Use a glass (or plastic cup for kids) to press a hole in the middle of the slice of bread.
Heat up a skillet and melt one tablespoon of butter in it.
Once the butter is melted, place the bread on the skillet and crack an egg directly into the hole you created with the glass.
Cook until the egg settles on the bottom, about one minute, and then flip the toast-egg combo to cook the other side.
Sprinkle it with salt and pepper to taste.
Serve this simple recipe with some fresh cut fruit, a mug of local coffee or tea, and don’t forget a bouquet of flowers!
If you are feeling a little more creative in the kitchen or want to make something sweet, try this recipe for No-Flip French Toast from Good Housekeeping.
What you will need:
About 4 cups of frozen mixed berries
1 tablespoon of freshly grated ginger
1 tablespoon of cornstarch
2 teaspoons of finely grated lime zest
3 large eggs (again, Farmer Boy Eggs for the best results, of course)
1 cup of low-fat milk
1 tablespoon of maple syrup
1 teaspoon of vanilla extract
½ teaspoon of ground cinnamon
¼ teaspoon of ground nutmeg
6 slices of whole-grain bread
Confectioner’s sugar and yogurt for serving
How to make it:
Heat your oven to 425 degrees Farenheight in a large cast-iron skillet.
Combine the berries, ginger, cornstarch and lime zest in the skillet.
In a medium bowl, whisk together the eggs, milk, maple syrup, vanilla, cinnamon and nutmeg.
Dip the bread slices into the egg mixture and arrange them in a circle, overlapping, on top of the berries.
Toss the cast iron into the oven and bake until the bread is golden brown, 18 to 20 minutes. Dust with confectioners’ sugar and serve with yogurt.
Try serving this with local bacon and a mimosa, and make sure you don’t forget a bouquet of flowers!
